Ingredients
  

Pasta
  • 12 oz Penne pasta or any pasta of choice
Bruschetta Topping
  • 2 cups Cherry tomatoes halved
  • 1 cup Fresh basil chopped
  • 3 cloves Garlic roasted
  • 1 tbsp Olive oil extra virgin
  • 1 tsp Balsamic vinegar
  • to taste Salt
  • to taste Black pepper
Cheese
  • 1/2 cup Parmesan cheese grated

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Make the Bruschetta Topping
  1. In a skillet over medium heat, combine the cherry tomatoes, chopped basil, roasted garlic, olive oil, balsamic vinegar, salt, and pepper. Cook for about 5-7 minutes until the tomatoes are softened.
Combine and Serve
  1. Add the cooked pasta to the skillet with the bruschetta topping. Toss to combine and heat through for an additional 2-3 minutes. Serve topped with grated Parmesan cheese.
