Ingredients
  

Base Layer
  • 1 cup dates pitted and soaked in warm water
  • 1/2 cup natural peanut butter smooth
  • 1/4 cup oats rolled
Caramel Layer
  • 1/4 cup maple syrup
  • 1/4 cup natural peanut butter smooth
Topping
  • 1/4 cup dark chocolate melted
  • 1/4 cup chopped peanuts for garnish

Method
 

Prepare the Base
  1. In a mixing bowl, combine the soaked dates, peanut butter, and oats. Mix until well combined and a sticky dough forms.
Form the Base Layer
  1. Line a loaf pan with parchment paper. Press the date mixture into the bottom of the pan evenly.
Make the Caramel Layer
  1. In a small bowl, mix together the maple syrup and peanut butter until smooth. Spread this mixture over the base layer in the loaf pan.
Add the Topping
  1. Drizzle the melted dark chocolate over the caramel layer and sprinkle with chopped peanuts.
Chill and Serve
  1. Refrigerate for at least 1 hour to set. Once set, cut into bars and serve.
