Ingredients
  

Pasta
  • 8 oz rotini pasta or any pasta of choice
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
Proteins
  • 1 cup salami sliced
  • 1 cup mozzarella balls bocconcini
  • 1/2 cup black olives sliced
Dressing
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1 clove garlic minced

Method
 

Prepare the Pasta
  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, salami, mozzarella balls, and black olives.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss until everything is well coated. Chill in the refrigerator for at least 30 minutes before serving.
