  • 3 cups Napa cabbage or coleslaw mix
  • 1 cup shredded carrots
  • 1 medium red bell pepper sliced
  • 2 green onions sliced
  • ½ cup crispy wonton strips or chow mein noodles
  • ¼ cup toasted almonds or cashews
  • 1 tablespoon sesame seeds
Dressing
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 teaspoon Sriracha optional
Optional Ingredients
  • ½ cup mandarin oranges optional

Method
 

Preparation
  1. In a large bowl, combine shredded chicken, Napa cabbage or coleslaw mix, shredded carrots, sliced red bell pepper, and sliced green onions.
  2. Add crispy wonton strips or chow mein noodles, toasted almonds or cashews, and sesame seeds to the bowl.
Dressing
  1. In a separate bowl, whisk together soy sauce or tamari, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, and Sriracha (if using).
Combine
  1. Pour the dressing over the salad and toss to combine.
  2. If using, gently fold in mandarin oranges before serving.
