Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup balsamic vinegar for glaze
  • 2 tablespoons honey for sweetness
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Vegetables
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced any color
  • 1 cup carrots, sliced
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon Italian seasoning

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and cook until reduced by half, about 10 minutes.
  3. Season the chicken breasts with garlic powder, salt, and black pepper.
  4. In a skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking sheet and brush with the balsamic glaze. Bake in the preheated oven for 20 minutes, or until cooked through.
Roast the Vegetables
  1. In a large bowl, toss broccoli, bell peppers, and carrots with olive oil and Italian seasoning.
  2. Spread the vegetables on a baking sheet and roast in the oven for 20 minutes, or until tender.
Serve
  1. Once the chicken is cooked, remove from the oven and let rest for a few minutes.
  2. Serve the glazed chicken alongside the roasted vegetables.

Notes
