Beef Enchilada Casserole

Ingredients
  

Meat
  • 1 lb ground beef can substitute with turkey or chicken
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp chili powder
Vegetables
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
Sauce
  • 2 cups enchilada sauce store-bought or homemade
Tortillas
  • 6 pieces corn tortillas cut into strips
Cheese
  • 2 cups cheddar cheese shredded

Method
 

Prepare the Beef
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion, bell pepper, salt, pepper, cumin, and chili powder. Cook until vegetables are tender.
Assemble the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a baking dish, spread a layer of enchilada sauce.
  3. Layer half of the tortilla strips over the sauce, followed by half of the beef mixture, and half of the cheese.
  4. Repeat the layers, finishing with the remaining cheese on top.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.

Notes
