Prepare the Beef
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add chopped onion, bell pepper, salt, pepper, cumin, and chili powder. Cook until vegetables are tender.
Assemble the Casserole
- Preheat the oven to 350°F (175°C).
- In a baking dish, spread a layer of enchilada sauce.
- Layer half of the tortilla strips over the sauce, followed by half of the beef mixture, and half of the cheese.
- Repeat the layers, finishing with the remaining cheese on top.
Bake
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
