Ingredients
  

Beans and Rice
  • 1 cup black beans cooked or canned
  • 1 cup white rice uncooked
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 cup corn optional
  • 1 tablespoon lime juice fresh
  • 2 tablespoons fresh cilantro chopped, for garnish

Method
 

Cooking the Rice
  1. In a pot, bring the vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked and liquid is absorbed.
Preparing the Beans
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, cumin, paprika, salt, and black pepper. Cook for another minute until fragrant.
  3. Stir in the black beans and corn (if using), and cook until heated through, about 5 minutes.
Combining and Serving
  1. Once the rice is cooked, fluff it with a fork and mix it with the black bean mixture. Stir in lime juice.
  2. Serve warm, garnished with fresh cilantro.
