Ingredients
  

For the Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour for coating
  • 1 tablespoon paprika for seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups vegetable oil for frying
For the Waffles
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs beaten
  • 1.5 cups milk
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
For Serving
  • 1/2 cup maple syrup
  • 1/4 cup butter for melting on waffles

Method
 

Prepare the Chicken
  1. In a bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add chicken thighs and marinate for at least 1 hour or overnight.
  2. Heat vegetable oil in a frying pan over medium-high heat. Remove chicken from marinade, allowing excess to drip off, and coat in flour.
  3. Fry chicken for about 10-12 minutes on each side, or until golden brown and internal temperature reaches 165°F (75°C). Drain on paper towels.
Make the Waffles
  1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, combine eggs, milk, melted butter, and vanilla extract. Mix wet ingredients into dry ingredients until just combined.
  3. Preheat waffle maker and pour batter according to manufacturer's instructions. Cook until golden brown.
Serve
  1. Place a waffle on a plate, top with a piece of fried chicken, and drizzle with maple syrup. Add a pat of butter if desired.

Notes
