Ingredients
  

Chicken Marinade
  • 1 pound chicken breast cut into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon curry powder
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
Peanut Sauce
  • 1 cup peanut butter creamy or crunchy
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 cup water adjust for consistency
  • 1 teaspoon red pepper flakes optional

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine soy sauce, brown sugar, curry powder, vegetable oil, garlic, and ginger. Add chicken strips and marinate for at least 30 minutes.
  2. Thread marinated chicken onto skewers.
Make the Peanut Sauce
  1. In a separate bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, and water until smooth. Adjust water for desired consistency.
  2. Stir in red pepper flakes if desired.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Grill the chicken skewers for about 5-7 minutes on each side, or until fully cooked.
Serve
  1. Serve the grilled chicken skewers with peanut sauce on the side for dipping.
