Chicken Tikka Masala

A flavorful dish of marinated chicken pieces cooked in a spiced tomato cream sauce, often served with rice or naan.

Ingredients
  

For the Chicken Marinade
  • 1 kg Chicken breast cut into bite-sized pieces
  • 1 cup Yogurt plain, unsweetened
  • 2 tbsp Lemon juice
  • 2 tbsp Garam masala
  • 1 tbsp Ground cumin
  • 1 tbsp Ground coriander
  • 1 tbsp Paprika
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
For the Sauce
  • 2 tbsp Oil vegetable or canola
  • 1 large Onion finely chopped
  • 2 cans Crushed tomatoes 400g each
  • 1 cup Heavy cream
  • 1 tbsp Sugar to balance acidity
  • 1 tsp Cilantro for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, paprika, salt, pepper, garlic, and ginger. Add chicken pieces and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
Cook the Chicken
  1. Preheat the oven to 200°C (400°F). Place marinated chicken on a baking sheet and bake for 15-20 minutes until cooked through.
Prepare the Sauce
  1. In a skillet, heat oil over medium heat. Add chopped onion and sauté until golden brown. Stir in crushed tomatoes and sugar, and simmer for 10 minutes.
  2. Add heavy cream and stir until well combined. Cook for an additional 5 minutes.
Combine and Serve
  1. Add the cooked chicken to the sauce and simmer for another 5 minutes. Garnish with cilantro and serve hot with rice or naan.

Notes

For a spicier version, add chopped green chilies to the marinade or sauce.
