Prep Pan & Cut Cinnamon Rolls
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch (or 2.5-quart) ceramic baking dish generously with softened butter.
- Open the cinnamon roll can and set the cream cheese icing container aside for drizzling later. Cut each raw cinnamon roll into 6 bite-sized pieces and scatter them evenly across the bottom of the prepared baking dish.
Toss the Spiced Apple Layer
- In a large mixing bowl, toss the sliced Honeycrisp and Granny Smith apples with brown sugar, cornstarch, ground cinnamon, nutmeg, pure vanilla extract, and lemon juice until the apple slices are glossy and well-coated.
- Spread the spiced apple mixture evenly over and between the cut cinnamon roll pieces in the baking dish.
Mix Oat Streusel & Bake to Golden Bubbling
- In a medium bowl, combine rolled oats, flour, brown sugar, cinnamon, and sea salt. Pour in the melted butter and stir with a fork until moist, crumbly clusters form. Evenly scatter the oat streusel over the apple layer.
- Bake at 375°F (190°C) for 32 to 36 minutes until the cinnamon roll pieces are cooked through and puffed, the apples are bubbling and tender, and the oat crumble topping is deeply golden and crunchy.
- Remove from oven and let rest for 5 minutes. Warm the reserved icing with 1 tablespoon of cream or milk in the microwave for 10 seconds, then drizzle generously over the crisp. Spoon into bowls and top with a scoop of melting vanilla bean ice cream!
