  • 3 cups grated carrots
  • 1 cup crushed pineapple drained
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts optional
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C).

  3. In another bowl, combine the vegetable oil, eggs, grated carrots, and crushed pineapple.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Stir in the chopped walnuts if using.
  6. Pour the batter into a greased cake pan and bake for 30 minutes or until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely before frosting.
  8. For the frosting, beat together the cream cheese and butter until smooth.
  9. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
  10. Spread the cream cheese frosting evenly over the cooled cake.
