Ingredients
  

Soup Base
  • 1 tablespoon coconut oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 can coconut milk full fat
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 cup fresh cilantro, chopped for garnish
Dumplings
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 1 tablespoon fresh chives, chopped

Method
 

Prepare the Soup
  1. In a large pot, heat coconut oil over medium heat. Add diced onion and sauté until translucent.
  2. Stir in minced garlic, grated ginger, and red curry paste. Cook for 2 minutes until fragrant.
  3. Add coconut milk and vegetable broth, stirring to combine. Bring to a simmer.
  4. Stir in soy sauce and lime juice. Let simmer for 10 minutes.
Make the Dumplings
  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Gradually add water, mixing until a dough forms. Fold in chopped chives.
  3. Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and cook for 10-12 minutes until dumplings are cooked through.
Serve
  1. Ladle the soup into bowls, ensuring each serving has dumplings. Garnish with fresh cilantro.
