Ingredients
  

Pudding Base
  • 1 cup coconut milk full-fat for creaminess
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey for sweetness
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Toppings
  • 1/2 cup fresh fruit such as berries or mango
  • 2 tablespoons toasted coconut flakes
  • 1 tablespoon nuts or seeds such as almonds or pumpkin seeds

Method
 

Prepare the Pudding
  1. In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, and salt until well combined.
  2. Let the mixture sit for about 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until it thickens.
Serve
  1. Once the pudding has thickened, stir it well and divide it into serving cups.
  2. Top with fresh fruit, toasted coconut flakes, and nuts or seeds as desired.
  3. Enjoy chilled as a healthy breakfast or dessert.
