Ingredients
  

Cilantro-Lime Rice
  • 1 cup white rice uncooked
  • 2 cups water
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro chopped
  • 1 teaspoon salt
Protein
  • 1 pound chicken breast diced
  • 1 tablespoon olive oil
  • 1 tablespoon chipotle seasoning
Toppings
  • 1 cup black beans canned, drained
  • 1 cup corn canned or frozen
  • 1 cup romaine lettuce shredded
  • 1 medium tomato diced
  • 1 avocado sliced
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese cheddar or Monterey Jack

Method
 

Prepare the Rice
  1. Rinse the rice under cold water until the water runs clear. Combine rice, water, and salt in a rice cooker and cook according to the manufacturer's instructions.
  2. Once cooked, fluff the rice with a fork and stir in lime juice and chopped cilantro.
Cook the Protein
  1. In a skillet, heat olive oil over medium heat. Add the diced chicken and sprinkle with chipotle seasoning.
  2. Cook until the chicken is browned and cooked through, about 7-10 minutes.
Assemble the Bowl
  1. In a bowl, layer the cilantro-lime rice, followed by the cooked chicken, black beans, corn, shredded lettuce, diced tomato, and sliced avocado.
  2. Top with sour cream and shredded cheese as desired.
