Ingredients
  

Casserole Base
  • 1 lb ground beef or turkey
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 packet taco seasoning
Cornbread Topping
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 tbsp baking powder
  • 1 cup shredded cheese cheddar or Mexican blend

Method
 

Prepare the Casserole Base
  1. Preheat the oven to 400°F (200°C). In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the diced onion, bell pepper, and taco seasoning to the skillet. Cook until vegetables are softened, about 5 minutes.
  3. Stir in the black beans and corn, mixing well. Remove from heat.
Make the Cornbread Topping
  1. In a mixing bowl, combine cornmeal, milk, egg, and baking powder. Mix until smooth.
  2. Fold in the shredded cheese until evenly distributed.
Assemble and Bake
  1. Spread the beef and vegetable mixture evenly in a baking dish. Pour the cornbread batter over the top.
  2. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick comes out clean.
