Ingredients

For the Aromatic Flavor Base
  • 2 tbsp extra virgin olive oil plus more for serving drizzle
  • 1 tbsp unsalted butter
  • 1 medium yellow onion finely diced
  • 2 medium carrots peeled and diced
  • 2 ribs celery finely sliced
  • 5 cloves fresh garlic minced
  • 1 tbsp fresh rosemary finely chopped
  • 1 tsp fresh thyme leaves
  • 1/4 tsp crushed red pepper flakes optional, for subtle warmth
For the Soup & Creamy Finish
  • 3 cans (15 oz each) cannellini beans rinsed and drained (or Great Northern beans)
  • 4 cups vegetable broth or low-sodium chicken bone broth
  • 1 small Parmesan cheese rind optional, simmers in broth for deep umami
  • 4 cups fresh baby spinach loosely packed
  • 1/2 cup freshly grated Parmesan cheese Parmigiano-Reggiano
  • 1 tbsp fresh lemon juice brightens the velvety broth
  • 1 tsp fine sea salt to taste
  • 1/2 tsp freshly cracked black pepper

Method

Sauté Aromatics & Bloom Herbs
  1. Warm olive oil and butter in a large Dutch oven or soup pot over medium heat. Add the diced onion, carrots, and celery. Sauté for 6 to 7 minutes until the vegetables soften and begin to sweeten.
  2. Stir in the minced garlic, chopped fresh rosemary, thyme, red pepper flakes, sea salt, and black pepper. Cook for 60 seconds until delightfully fragrant, stirring constantly to prevent the garlic from scorching.
Simmer the Broth & Beans
  1. Add the drained cannellini beans, vegetable broth, and the Parmesan cheese rind (if using) into the Dutch oven. Stir well and bring to a lively boil over medium-high heat.
  2. Reduce heat to medium-low and simmer uncovered for 10 minutes to allow the beans to absorb the aromatic herb broth.
Blend for Velvet Creaminess & Wilt Spinach
  1. Remove and discard the Parmesan rind. Use an immersion blender directly in the pot to blend about one-third to one-half of the soup until luscious and creamy, leaving plenty of whole tender beans and vegetables for satisfying texture. (Alternatively, ladle 2 cups of soup into a blender, purée until smooth, and stir back into the pot).
  2. Turn heat to low. Stir in the fresh baby spinach, grated Parmesan cheese, and fresh lemon juice. Simmer gently for 2 minutes until the spinach wilts into vibrant emerald ribbons and the cheese melts seamlessly into the broth.
  3. Ladle into warm bowls. Garnish with a swirl of peppery extra virgin olive oil, extra grated Parmesan, cracked black pepper, and serve alongside crusty artisan sourdough bread.
