Ingredients

For the Flaky Pastry & Melty Brie Base
  • 1 sheet (about 8 oz) frozen puff pastry thawed according to package instructions
  • 8 oz French Brie cheese chilled, cut into 24 bite-sized cubes (rind can remain on or be removed)
  • 1 tbsp all-purpose flour for lightly dusting the work surface
For the Ruby Cranberry Pecan Topping
  • 1/2 cup whole berry cranberry sauce canned or homemade
  • 1/3 cup pecans finely chopped and lightly toasted
  • 1 tsp orange zest freshly grated for citrus brightness
  • 2 tbsp pure honey or pure maple syrup, for drizzling
  • 1 tbsp fresh rosemary leaves finely chopped, plus mini sprigs for festive garnish

Method

Prep Muffin Tin & Cut Pastry
  1. Preheat oven to 375°F (190°C). Generously grease a 24-cup mini muffin tin with nonstick spray or melted butter.
  2. Unroll the thawed puff pastry sheet onto a lightly floured surface. Roll out gently with a rolling pin into a 10x15-inch rectangle. Cut into 24 equal squares (4 cuts by 6 cuts).
Assemble Brie & Cranberry Filling
  1. Press each puff pastry square gently into a cavity of the mini muffin tin, allowing the corners to point slightly upward above the rim.
  2. Place one cube of brie cheese into the center of each pastry cup. Top each piece of cheese with one heaping teaspoon of whole cranberry sauce, a sprinkle of orange zest, and chopped pecans.
Bake to Golden Crispy & Garnish
  1. Bake at 375°F (190°C) for 13 to 16 minutes until the puff pastry edges are puffed, deeply golden brown, and crisp, and the brie cheese is melted and bubbling.
  2. Remove from oven and let rest in the tin for 5 minutes (this allows the molten brie to set slightly so they lift out cleanly). Gently run a butter knife around edges to release the bites onto a serving platter.
  3. Drizzle with warm honey, garnish each bite with a tiny fresh rosemary sprig, and serve warm!
