  • 1 cup raw cashews (soaked in boiling water)
  • 2 tsp coconut oil (for sautéing)
  • 4 cloves garlic (finely chopped)
  • 1 small onion (finely chopped)
  • 5 oz baby spinach (140g)
  • 1 can artichoke hearts (strained and chopped (14 oz/400 ml))
Liquids & Seasonings
  • 1.25 cups unsweetened almond milk
  • 0.25 cup nutritional yeast
  • 1 tbsp lemon juice
  • 2 tsp miso
  • 0.75 tsp sea salt
  • 0.5 tsp pepper

Method
 

Cooking Steps
  1. Soak the raw cashews in boiling water for about 15 minutes, then drain.
  2. In a skillet, heat coconut oil over medium heat and sauté garlic and onion until soft.
  3. Add baby spinach to the skillet and cook until wilted.
  4. In a blender, combine soaked cashews, sautéed mixture, artichoke hearts, almond milk, nutritional yeast, lemon juice, miso, sea salt, and pepper. Blend until creamy and smooth.
  5. Transfer the mixture to a baking dish and bake at 350°F (175°C) for 20 minutes or until heated through.

Notes
