Ingredients
  

Potatoes
  • 4 medium Russet Potatoes or Yukon Gold
Toppings
  • 1/4 cup Olive Oil for drizzling
  • 2 teaspoons Sea Salt to taste
  • 1 teaspoon Black Pepper freshly ground
  • 2 tablespoons Fresh Rosemary chopped
  • 1 cup Parmesan Cheese grated, optional

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly.
  3. Using a sharp knife, make thin slices across the top of each potato, being careful not to cut all the way through.
  4. Place the potatoes on a baking sheet lined with parchment paper.
Cooking
  1. Drizzle the olive oil over the potatoes, ensuring it seeps into the cuts.
  2. Sprinkle with sea salt, black pepper, and chopped rosemary.
  3. Bake in the preheated oven for 45-50 minutes, or until crispy and golden brown.
  4. If using, sprinkle grated Parmesan cheese over the potatoes during the last 10 minutes of baking.
Serving
  1. Remove from the oven and let cool slightly before serving.
  2. Serve warm as a side dish.
