Ingredients
  

For the Pot Roast
  • 3 pounds beef chuck roast trimmed
  • 1 tablespoon olive oil for searing
  • 1 cup beef broth
  • 2 tablespoons honey
  • 2 tablespoons chipotle in adobo sauce minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Serving
  • 8 small corn tortillas warmed
  • 1 cup fresh cilantro chopped
  • 1 cup red onion diced
  • 1 cup lime wedges

Method
 

Prepare the Pot Roast
  1. Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned, about 3-4 minutes per side.
  2. Transfer the seared roast to the crockpot. In a bowl, mix beef broth, honey, chipotle in adobo, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Pour the mixture over the roast in the crockpot.
  4. Cover and cook on low for 8 hours or until the meat is tender and easily shredded.
Assemble the Tacos
  1. Once the roast is done, shred the meat with two forks and mix it with the cooking juices.
  2. Serve the shredded meat in warmed corn tortillas, topped with chopped cilantro, diced red onion, and lime wedges.
