Preparation
- Place the chicken breasts at the bottom of the crockpot.
- Add the salsa, black beans, corn, cumin, chili powder, garlic powder, onion powder, salt, pepper, and bell peppers on top of the chicken.
- Stir gently to combine the ingredients without disturbing the chicken too much.
Cooking
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken using two forks and mix it back into the sauce.
Serving
- Serve the Mexican chicken in tacos, over rice, or with tortillas.
- Garnish with fresh cilantro, avocado, or cheese if desired.
