Ingredients
  

Cucumber Base
  • 4 cups cucumbers sliced into thin rounds
  • 1 tablespoon salt for brining
Kimchi Paste
  • 3 tablespoons Korean red pepper flakes adjust to taste
  • 2 tablespoons fish sauce or soy sauce for a vegetarian option
  • 1 tablespoon sugar to balance the flavors
  • 4 cloves garlic minced
  • 1 inch ginger grated
  • 2 scallions chopped

Method
 

Prepare Cucumbers
  1. In a mixing bowl, combine sliced cucumbers and salt. Toss to coat and let sit for 15 minutes to draw out moisture.
Make Kimchi Paste
  1. In a separate bowl, mix together Korean red pepper flakes, fish sauce, sugar, minced garlic, grated ginger, and chopped scallions to form a paste.
Combine and Ferment
  1. After 15 minutes, rinse the cucumbers under cold water and drain well. Add the kimchi paste to the cucumbers and mix thoroughly.
  2. Transfer the mixture to a jar or airtight container, pressing down to remove air pockets. Seal and let ferment at room temperature for 1-2 days, then refrigerate.
