  • 8 oz wide rice noodles
  • 1 cup chicken breast sliced
  • 1 cup shrimp peeled and deveined
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup carrot julienned
  • 1 cup broccoli florets
  • 1 cup Thai basil leaves
Sauces and Seasonings
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp chili paste
  • 3 cloves garlic minced
  • 2 pcs Thai bird's eye chili sliced
  • 2 tbsp vegetable oil for frying

Method
 

Cooking Instructions
  1. Soak the wide rice noodles in warm water for 30 minutes, then drain.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the minced garlic and Thai bird's eye chili, sauté until fragrant.
  4. Add the sliced chicken breast and shrimp, cooking until fully cooked through.
  5. Incorporate the sliced bell pepper, julienned carrot, and broccoli florets, stir-frying for a few minutes until vegetables are tender.
  6. Add the soaked noodles, soy sauce, oyster sauce, fish sauce, sugar, and chili paste. Toss everything together until well combined.
  7. Remove from heat and stir in the Thai basil leaves before serving.
