Ingredients
  

  • 2 pounds beef chuck
  • 4 medium carrots
  • 3 medium potatoes
  • 1 large onion
  • 2 stalks celery
  • 3 cloves garlic
  • 1 bottle Guinness stout
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon bay leaf
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat. Add beef chuck and brown on all sides.
  2. Remove the beef and set aside. In the same pot, add onion, garlic, carrots, celery, and cook until softened.
  3. Add potatoes, tomato paste, thyme, bay leaf, salt, and pepper. Stir to combine.
  4. Pour in Guinness stout and beef broth. Return the beef to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 2 hours until beef is tender.
  6. Adjust seasoning to taste before serving.
