- Heat olive oil in a large pot over medium heat. Add beef chuck and brown on all sides.
- Remove the beef and set aside. In the same pot, add onion, garlic, carrots, celery, and cook until softened.
- Add potatoes, tomato paste, thyme, bay leaf, salt, and pepper. Stir to combine.
- Pour in Guinness stout and beef broth. Return the beef to the pot.
- Bring to a boil, then reduce heat and simmer for about 2 hours until beef is tender.
- Adjust seasoning to taste before serving.
