Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 2 cups broccoli florets
  • 1 cup bell pepper sliced
  • 1 cup carrot sliced
  • 2 tablespoons olive oil for cooking
  • 3 tablespoons soy sauce low sodium
  • 1 tablespoon honey
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic minced
  • 1 teaspoon sesame oil
  • 2 green onions sliced
  • 1 avocado sliced
  • 1/4 cup sesame seeds

Method
 

  1. Heat olive oil in a pan over medium heat.
  2. Add the shrimp and cook until pink, about 3-4 minutes.
  3. Add the broccoli, bell pepper, and carrot to the pan and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, mix together soy sauce, honey, ginger, garlic, and sesame oil.
  5. Pour the sauce over the shrimp and vegetables; stir to combine.
  6. Serve the shrimp and vegetables in bowls, topped with sliced green onions, avocado, and sesame seeds.
