Method
 

Preparation
  1. Marinate the chicken thighs in buttermilk and Cajun seasoning for at least 30 minutes.
  2. Prepare the collard greens by washing and chopping them.
  3. Cook the sweet potatoes by boiling until tender, then mash them with cinnamon and nutmeg.
Cooking
  1. Fry the marinated chicken thighs in cornmeal until golden brown.
  2. Cook the black-eyed peas and corn.
  3. Serve the chicken alongside collard greens and cooked rice.
  4. Prepare the sweet potato pie by filling the pie crust with mashed sweet potatoes and sugar, then bake according to crust instructions.
