Ingredients
  

Grits Base
  • 1 cup quick cooking grits
  • 4 cups water
  • 1/4 teaspoon salt
  • 3 tablespoons butter
  • 2 tablespoons heavy cream
  • 1 1/2 cups shredded sharp cheddar cheese
Shrimp Mixture
  • 6 slices smoked bacon
  • 1 pound large shrimp peeled and deveined
  • 2 teaspoons Cajun seasoning
  • 1/8 teaspoon ground cayenne pepper
  • 1 tablespoon vegetable oil
  • 1 piece red bell pepper finely chopped
  • 3 pieces green onions chopped
  • 3 cloves garlic minced
  • 1/4 cup low sodium chicken or vegetable broth
  • 1 teaspoon Worcestershire Sauce
  • 2 teaspoons lemon juice

Method
 

Cooking Process
  1. Bring 4 cups of water to a boil in a medium saucepan. Stir in the grits and salt; reduce heat and cook until thickened, about 5 minutes.
  2. Stir in the butter, heavy cream, and cheddar cheese until melted and smooth. Set aside.
  3. In a large skillet, cook the bacon until crisp. Remove bacon and drain on paper towels.
  4. In the same skillet, add vegetable oil and sauté the red bell pepper, green onions, and garlic until softened.
  5. Add the shrimp, Cajun seasoning, cayenne pepper, broth, Worcestershire sauce, and lemon juice. Cook until shrimp are opaque and cooked through, about 3-4 minutes.
  6. Serve the shrimp mixture over the grits and top with crumbled bacon.
