Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the brioche bread cubes, brown sugar, chopped pecans, melted butter, cinnamon, and salt. Mix well.
- In a separate bowl, whisk together the milk, heavy cream, sweet potato puree, granulated sugar, vanilla bean paste, cinnamon, pumpkin pie spice, and salt.
- Add the eggs to the milk mixture and whisk until combined.
- Pour the milk mixture over the bread mixture and gently stir until the bread is soaked.
- Transfer the mixture to a greased baking dish.
- Bake for 50 minutes or until set and golden brown.
- In a small saucepan, combine the maple syrup, bourbon whiskey, and vanilla bean paste. Heat until warm.
- Serve the bread pudding warm, drizzled with the bourbon sauce and a scoop of vanilla ice cream.
