Ingredients
  

Bread Base
  • 12 slices brioche bread, cut into 1” cubes
  • 1 cup brown sugar
  • 2 cups chopped pecans
  • 6 tbsp salted butter, melted
  • 2 tsp cinnamon
  • large pinch salt
Custard Mixture
  • 1 cup whole milk (or milk of choice)
  • 1 cup heavy cream
  • 3/4 cup sweet potato puree
  • 1/4 cup granulated sugar
  • 1 tsp vanilla bean paste or extract
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • pinch salt
  • 4 large eggs at room temperature
  • 2 tbsp salted butter, melted and slightly cooled
Bourbon Sauce
  • 3/4 cup maple syrup
  • 1-2 tbsp bourbon whiskey
  • 1/2 tsp vanilla bean paste or extract
  • vanilla ice cream, for serving for serving

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the brioche bread cubes, brown sugar, chopped pecans, melted butter, cinnamon, and salt. Mix well.
  3. In a separate bowl, whisk together the milk, heavy cream, sweet potato puree, granulated sugar, vanilla bean paste, cinnamon, pumpkin pie spice, and salt.
  4. Add the eggs to the milk mixture and whisk until combined.
  5. Pour the milk mixture over the bread mixture and gently stir until the bread is soaked.
  6. Transfer the mixture to a greased baking dish.
  7. Bake for 50 minutes or until set and golden brown.
  8. In a small saucepan, combine the maple syrup, bourbon whiskey, and vanilla bean paste. Heat until warm.
  9. Serve the bread pudding warm, drizzled with the bourbon sauce and a scoop of vanilla ice cream.
