  • 2 tablespoons ice water
Cream Cheese Filling

  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese softened
Fruit Topping
  • 1 cup mixed fresh fruits such as strawberries, blueberries, kiwi, and raspberries
  • 1 tablespoon apricot jam for glaze

Method
 

Preparation
  1. Preheat the oven and prepare a tart pan with pastry.
  2. In a bowl, combine flour and sugar; cut in butter until the mixture resembles coarse crumbs.
  3. Add egg yolk and ice water; mix until dough forms.
  4. Roll out the dough, shape it in the tart pan, and refrigerate for 30 minutes.
  5. Bake in the preheated oven for 25 minutes or until golden brown. Let cool.
Filling and Topping
  1. In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  2. Blend cream cheese until smooth; fold in the whipped cream mixture gently.
  3. Spread the cream cheese mixture evenly into the cooled tart crust.
  4. Top with mixed fresh fruits.
  5. Warm apricot jam in a small saucepan; brush over fruits for a glaze.
