Method
- In a mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
- Mix in the vanilla bean paste (or extract) and salt.
- Gradually add the all-purpose flour, cinnamon, cardamom, ginger, and allspice, mixing until just combined.
- Fold in the dark chocolate, dried cherries, hazelnuts, and peppermint extract.
- Divide the dough in half and shape each half into a log. Wrap in plastic wrap and chill in the refrigerator for at least 2 hours.
- Preheat the oven to 350°F (175°C).
- Remove the logs from the refrigerator and slice them into 1/4-inch thick cookies.
- In a shallow dish, mix the sparkling sugar, granulated sugar, cinnamon, and raw sugar for coating.
- Coat each cookie slice in the sugar mixture and place them on a baking sheet lined with parchment paper.
- Bake for 15 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Drizzle with melted white chocolate and sprinkle with crushed candy canes if desired.
