Ingredients
  

  • 1 cup unsalted butter softened
  • 1/3 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 1 tsp vanilla bean paste or 2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp ginger
  • 1/8 tsp allspice
  • 2 oz dark chocolate chopped
  • 1/2 cup dried cherries roughly chopped
  • 3 tbsp sparkling sugar for coating
  • 3 tbsp granulated sugar for coating
  • 2 tsp cinnamon for coating
  • 1/2 cup raw sugar for coating
  • 1/2 cup unsweetened dark cocoa powder
  • 1/2 cup hazelnuts roughly chopped
  • 1/2 tsp peppermint extract
  • 1/2 cup white melting chocolate
  • 2 tsp oil for coating
  • 3 pieces candy canes crushed for sprinkling

Method
 

  1. In a mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  2. Mix in the vanilla bean paste (or extract) and salt.
  3. Gradually add the all-purpose flour, cinnamon, cardamom, ginger, and allspice, mixing until just combined.
  4. Fold in the dark chocolate, dried cherries, hazelnuts, and peppermint extract.
  5. Divide the dough in half and shape each half into a log. Wrap in plastic wrap and chill in the refrigerator for at least 2 hours.
  6. Preheat the oven to 350°F (175°C).
  7. Remove the logs from the refrigerator and slice them into 1/4-inch thick cookies.
  8. In a shallow dish, mix the sparkling sugar, granulated sugar, cinnamon, and raw sugar for coating.
  9. Coat each cookie slice in the sugar mixture and place them on a baking sheet lined with parchment paper.
  10. Bake for 15 minutes or until the edges are lightly golden.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  12. Drizzle with melted white chocolate and sprinkle with crushed candy canes if desired.

Notes
