Beef and Vegetables
  • 1 lb beef sirloin (thinly sliced)
  • 2 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (carrots, peas, and corn)
  • 2 tablespoons soy sauce or to taste
  • 2 tablespoons vegetable oil for frying
  • 2 cloves garlic (minced)
  • 2 large eggs (beaten)
  • 2 stalks green onions (sliced for garnish)

Method
 

Cooking Instructions
  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and sliced beef, stir-frying until the beef is browned and cooked through.
  3. Add the mixed vegetables and cook until they're tender.
  4. Push the beef and vegetables to one side of the pan and pour the beaten eggs into the empty space, scrambling them until fully cooked.
  5. Add the cooked rice and soy sauce to the pan, mixing everything together and stir-frying for a few minutes until heated through.
  6. Garnish with sliced green onions before serving.
