  • 1 can Black beans
  • 2 cups Brown rice
  • 1 cup Quinoa
  • 2 cups Broccoli Chopped
  • 2 cups Bell peppers Chopped
  • 1 cup Carrots Chopped
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Black pepper

Method
 

Cooking Steps
  1. Preheat the oven to 400°F (200°C).
  2. Chop the broccoli, bell peppers, and carrots.
  3. In a large bowl, combine chicken breast, black beans, brown rice, quinoa, broccoli, bell peppers, and carrots.
  4. Drizzle with olive oil and season with garlic powder, paprika, salt, and black pepper. Mix well.
  5. Spread the mixture evenly onto a baking sheet.
  6. Roast in the oven for about 30 minutes or until the chicken is cooked through and vegetables are tender.
  7. Allow to cool before portioning into containers for meal prep.
