Ingredients
  

  • 2 medium boneless chicken breast (about 250 – 300 grams)
  • 1.5 tablespoon cornflour / cornstarch
  • 0.25 teaspoon pepper
  • 3 tablespoon oil
  • 2 dry red chilli
  • 0.5 tablespoon minced garlic
  • 2 green onion (white and green part separated, chopped)
  • 2 bird's eye chillies (optional)
  • 1 cup red bell pepper (cubed)
  • 150 grams raw whole cashew
  • 1 teaspoon light soy sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon oyster sauce
  • 1 tablespoon fish sauce
  • 2 teaspoon sugar
  • 2 tablespoons water

Method
 

  1. Cut the chicken breast into bite-sized pieces and toss with cornflour and pepper.
  2. Heat oil in a pan over medium heat and stir-fry the dry red chilli and minced garlic until fragrant.
  3. Add the chicken and cook until browned and cooked through.
  4. Stir in the chopped green onion and green part, bird's eye chillies, and red bell pepper.
  5. Add the cashews, light soy sauce, dark soy sauce, oyster sauce, fish sauce, sugar, and water.
  6. Stir-fry for a few more minutes until everything is well combined and the sauce thickens.
