Sauce Ingredients
  • 1/2 cup low-sodium soy sauce
  • 2 tablespoons brandy
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 1-2 tablespoons sriracha adjust for desired spice level
  • 1 tablespoon grated ginger
Vegetables
  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 1 each red bell pepper sliced
  • 1 each yellow bell pepper sliced
  • 4 cloves garlic minced
  • 1 each zucchini sliced
  • 1 each Chinese eggplant sliced
  • 1 5 oz. can water chestnuts sliced
  • 1 head broccoli cut into florets
For Serving
  • to taste yakisoba noodles or rice
  • to taste sesame seeds for garnish

Method
 

Preparation
  1. In a bowl, mix together soy sauce, brandy, brown sugar, cornstarch, sriracha, and grated ginger to create the stir-fry sauce.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
Cooking
  1. Add chopped onion, bell peppers, garlic, zucchini, and eggplant to the pan, and stir-fry for about 5-7 minutes until vegetables begin to soften.
  2. Add broccoli and water chestnuts to the pan, and continue to stir-fry for another 5 minutes.
  3. Pour the stir-fry sauce over the vegetables and stir well to coat.
  4. Cook for an additional 5 minutes, stirring frequently until the sauce thickens and vegetables are cooked through.
  5. Serve the veggie stir-fry over yakisoba noodles or rice, garnished with sesame seeds.
