- In a bowl, mix together soy sauce, brandy, brown sugar, cornstarch, sriracha, and grated ginger to create the stir-fry sauce.
- Heat vegetable oil in a large pan or wok over medium-high heat.
Cooking
- Add chopped onion, bell peppers, garlic, zucchini, and eggplant to the pan, and stir-fry for about 5-7 minutes until vegetables begin to soften.
- Add broccoli and water chestnuts to the pan, and continue to stir-fry for another 5 minutes.
- Pour the stir-fry sauce over the vegetables and stir well to coat.
- Cook for an additional 5 minutes, stirring frequently until the sauce thickens and vegetables are cooked through.
- Serve the veggie stir-fry over yakisoba noodles or rice, garnished with sesame seeds.
