Ground Chicken Taco Casserole

Ingredients
  

Casserole Base
  • 1 lb Ground Chicken
  • 1 packet Taco Seasoning
  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn canned or frozen
  • 1 cup Salsa
  • 4 large Tortillas corn or flour
  • 2 cups Shredded Cheese cheddar or Mexican blend
Toppings
  • 1 cup Sour Cream for serving
  • 1 cup Chopped Lettuce for serving
  • 1 medium Tomato diced, for serving
  • 1 cup Sliced Jalapeños optional

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground chicken until browned, about 5-7 minutes.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and cook for another 5 minutes.
  4. In a baking dish, layer half of the tortillas, followed by half of the chicken mixture, and half of the cheese. Repeat the layers.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let it cool for a few minutes.
  2. Top with sour cream, lettuce, diced tomato, and jalapeños as desired.
  3. Cut into squares and serve warm.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
