Ingredients
  

Chicken Marinade
  • 1 pound boneless chicken breasts cut into bite-sized pieces
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 1 tablespoon honey
  • 1 teaspoon black pepper
Vegetables
  • 1 cup zucchini sliced
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
Dipping Sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, sesame oil, vegetable oil, garlic, ginger, honey, and black pepper. Add the chicken pieces and mix well. Let marinate for at least 15 minutes.
Prepare the Grill
  1. Preheat the grill to medium-high heat. Lightly oil the grill grates.
Grill the Chicken and Vegetables
  1. Place the marinated chicken on the grill and cook for about 5-7 minutes on each side, or until fully cooked. Add the sliced vegetables to the grill and cook until tender, about 5 minutes.
Make the Dipping Sauce
  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and sugar until well combined.
Serve
  1. Serve the grilled chicken and vegetables hot with the dipping sauce on the side.
