Instant Pot Carnitas

Tender and flavorful pulled pork cooked quickly in an Instant Pot, perfect for tacos, burritos, or bowls.

Ingredients
  

Pork
  • 3 pounds pork shoulder cut into large chunks
Spices
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Liquids
  • 1 cup orange juice
  • 1 onion onion chopped
  • 4 cloves garlic minced
  • 1 cup chicken broth
Toppings
  • 1 cup cilantro chopped
  • 1 lime lime cut into wedges

Method
 

Prepare the Pork
  1. Season the pork shoulder chunks with cumin, chili powder, oregano, salt, and black pepper.
Sauté
  1. Set the Instant Pot to 'Sauté' mode. Add a little oil and brown the pork chunks on all sides. Remove and set aside.
Cook
  1. Add the chopped onion and minced garlic to the pot, sauté for 2 minutes. Then add the orange juice and chicken broth, scraping the bottom of the pot to deglaze.
  2. Return the pork to the pot, close the lid, and set to 'Manual' on high pressure for 60 minutes.
Release and Shred
  1. Once cooking is complete, allow for a natural release for 10 minutes, then quick release any remaining pressure. Shred the pork using two forks.
Serve
  1. Serve the carnitas with chopped cilantro and lime wedges. Enjoy in tacos, burritos, or on their own.

Notes

For extra crispy carnitas, broil the shredded pork in the oven for 5-10 minutes after cooking.
