Ingredients

Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter softened
  • 1 cup milk whole or 2%
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • food coloring blue and green for decoration
Decoration
  • 1 package fondant blue and green
  • 1 cup edible glitter optional

Method

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Frosting and Decoration
  1. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix until smooth.
  2. Add the milk and vanilla extract, mixing until well combined. Adjust consistency with more milk or sugar if necessary.
  3. Divide the frosting into two bowls. Color one bowl with blue food coloring and the other with green.
  4. Place one cake layer on a serving plate and spread a layer of blue frosting on top.
  5. Top with the second cake layer and frost the top and sides with the green frosting.
  6. Roll out the fondant and cut out shapes to decorate the cake, resembling Lilo and Stitch.
  7. Optionally, sprinkle edible glitter over the cake for a magical touch.
