Ingredients
  

Stuffing
  • 2 medium yellow squash halved and seeds removed
  • 1 cup chopped bell pepper any color
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 1 cup cooked quinoa
  • 1 teaspoon olive oil for cooking
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup grated Parmesan cheese optional

Method
 

Prepare the Squash
  1. Preheat the oven to 375°F (190°C). Cut the yellow squash in half lengthwise and scoop out the seeds to create a hollow center.
Cook the Filling
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté until softened, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  2. Add cooked quinoa, oregano, salt, and black pepper to the skillet. Mix well and cook for another 2-3 minutes until heated through.
Stuff and Bake
  1. Spoon the quinoa mixture into the hollowed squash halves. If desired, sprinkle grated Parmesan cheese on top.
  2. Place the stuffed squash in a baking dish and cover with foil. Bake for 25-30 minutes until the squash is tender.
