Ingredients
  

Salad Base
  • 4 ears sweet corn grilled and kernels removed
  • 1 cup cherry tomatoes halved
  • 1 cup red onion finely chopped
  • 1 cup cilantro chopped
  • 1 cup avocado diced
Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Toppings
  • 1/4 cup cotija cheese crumbled
  • 1 tablespoon lime zest

Method
 

Prepare the Corn
  1. Preheat the grill to medium-high heat. Grill the corn for about 10 minutes, turning occasionally until charred. Remove from heat and let cool before cutting the kernels off the cob.
Mix the Salad
  1. In a large mixing bowl, combine the grilled corn kernels, cherry tomatoes, red onion, cilantro, and avocado.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, salt, and black pepper until smooth.
Combine and Serve
  1. Pour the dressing over the salad mixture and toss gently to combine. Top with crumbled cotija cheese and lime zest before serving.
