  • 1 pound loaf bread cubed
  • 8 large eggs
  • 1 cup heavy cream
  • 2 cups milk
  • 0.25 cup light brown sugar packed
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon kosher salt
  • 1 Tablespoon vanilla extract
  • 3 Tablespoons light brown sugar packed, for topping
  • 3 Tablespoons granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping
  • 0.25 teaspoon ground nutmeg for topping
  • 2 Tablespoons cold butter cut into pieces

Method
 

  1. Cut the bread into cubes and place it in a greased casserole dish.
  2. In a large bowl, whisk together the eggs, heavy cream, milk, light brown sugar, ground cinnamon, kosher salt, and vanilla extract until well combined.
  3. Pour the egg mixture over the bread cubes, ensuring all pieces are soaked.
  4. Cover the dish with plastic wrap and refrigerate overnight.
  5. Preheat the oven to 350°F (175°C).
  6. Remove the casserole from the refrigerator and uncover.
  7. In a small bowl, mix together the light brown sugar, granulated sugar, ground cinnamon, and ground nutmeg, then sprinkle over the top.
  8. Dot with cold butter pieces.
  9. Bake for 45 minutes or until golden brown and set.
