Ingredients
  

Soup Base
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 1 cup pastina tiny pasta
  • 1 medium carrot diced
  • 1 stalk celery diced
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon fresh parsley chopped for garnish

Method
 

Prepare the Soup
  1. In a large pot, heat the olive oil over medium heat. Add the diced carrot, celery, and minced garlic, and sauté for about 5 minutes until the vegetables are softened.
  2. Pour in the chicken broth and bring to a boil.
  3. Once boiling, add the pastina and cook according to package instructions, usually about 7-10 minutes.
  4. Season with salt and black pepper to taste.
  5. Serve hot, garnished with chopped fresh parsley.
