  • 2 cups cottage cheese preferably low-fat
  • 1/2 cup peanut butter smooth or crunchy
  • 1/4 cup honey or maple syrup for vegan option
  • 1 teaspoon vanilla extract
  • 1/4 cup milk any kind (dairy or non-dairy)
Optional Mix-ins
  • 1/4 cup chocolate chips or chopped nuts
  • 1/4 cup crushed cookies for added texture

Method
 

Prepare the Base
  1. In a blender, combine the cottage cheese, peanut butter, honey, vanilla extract, and milk. Blend until smooth and creamy.
  2. Taste the mixture and adjust sweetness if necessary by adding more honey or sweetener.
Chill the Mixture
  1. Transfer the mixture to a mixing bowl and refrigerate for at least 2 hours to chill.
Churn the Ice Cream
  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze
  1. Transfer the ice cream to an airtight container and freeze for at least 2 hours to firm up.
