Ingredients
  

Brisket
  • 4 pounds Brisket Flat cut preferred
Rub
  • 2 tablespoons Paprika
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Onion Powder
  • 1 tablespoon Black Pepper
  • 1 tablespoon Salt
  • 1 teaspoon Cayenne Pepper Optional for heat
Wood Pellets
  • 2 cups Hickory Wood Pellets For smoking

Method
 

Preparation
  1. Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor.
  2. In a bowl, mix all the rub ingredients together until well combined.
  3. Rub the mixture generously over the brisket, covering all sides. Let it sit at room temperature for 30 minutes.
Smoking
  1. Preheat the pellet smoker to 225°F (107°C).
  2. Add hickory wood pellets to the smoker.
  3. Place the brisket on the smoker grates, fat side up, and close the lid.
  4. Smoke the brisket for about 5 hours, or until the internal temperature reaches 195°F (90°C).
  5. Wrap the brisket in aluminum foil and let it rest for at least 30 minutes before slicing.
Serving
  1. Slice the brisket against the grain and serve with your favorite BBQ sauce.
