Preparation
- Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor.
- In a bowl, mix all the rub ingredients together until well combined.
- Rub the mixture generously over the brisket, covering all sides. Let it sit at room temperature for 30 minutes.
Smoking
- Preheat the pellet smoker to 225°F (107°C).
- Add hickory wood pellets to the smoker.
- Place the brisket on the smoker grates, fat side up, and close the lid.
- Smoke the brisket for about 5 hours, or until the internal temperature reaches 195°F (90°C).
- Wrap the brisket in aluminum foil and let it rest for at least 30 minutes before slicing.
Serving
- Slice the brisket against the grain and serve with your favorite BBQ sauce.
