Ingredients
  

Spinach
  • 30 ounces frozen spinach Thawed and excess water removed
Sauce Base
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic Minced
  • 1.5 cups milk
  • 0.25 cups grated Parmesan cheese
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon nutmeg

Cooking Instructions
  1. Thaw spinach, squeeze and remove excess water, set aside.
  2. In a medium sized skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
  3. Sprinkle the flour over the butter and garlic mixture. Stir continuously for about 2 minutes until the flour is well incorporated.
  4. Slowly pour in the milk, whisking continuously. The roux will begin to thicken, which takes 4-5 minutes.
  5. Add the spinach. Season with salt, pepper, and nutmeg. Stir in the Parmesan cheese. Simmer for five minutes.
  6. Serve topped with additional Parmesan if desired.

Notes
