Ingredients
  

Ceviche Base
  • 1 pound raw shrimp peeled and deveined
  • 1/2 cup fresh lime juice about 4-5 limes
  • 1 medium red onion finely chopped
  • 1 medium tomato diced
  • 1 medium cucumber diced
  • 1 jalapeño finely chopped seeds removed for less heat
  • 1/4 cup fresh cilantro chopped

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine the shrimp and lime juice. Ensure the shrimp is fully submerged in the juice.
  2. Cover the bowl with plastic wrap and refrigerate for about 15 minutes, or until the shrimp turns opaque.
Mix the Ingredients
  1. Once the shrimp is ready, drain excess lime juice and add the red onion, tomato, cucumber, jalapeño, and cilantro.
  2. Season with salt and black pepper to taste, mixing well to combine all ingredients.
Serve
  1. Serve immediately in small bowls or on tortilla chips. Garnish with additional cilantro if desired.
