Skirt Steak Marinade with Chimichurri

Ingredients
  

Marinade
  • 1 cup Olive Oil
  • 1/4 cup Soy Sauce
  • 1/4 cup Red Wine Vinegar
  • 4 cloves Garlic minced
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Black Pepper freshly ground
  • 1 teaspoon Salt
  • 2 pounds Skirt Steak
Chimichurri Sauce
  • 1 cup Fresh Parsley chopped
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 4 cloves Garlic minced
  • 1 teaspoon Red Pepper Flakes
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground

Method
 

Marinate the Steak
  1. In a mixing bowl, whisk together olive oil, soy sauce, red wine vinegar, minced garlic, oregano, black pepper, and salt.
  2. Place the skirt steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, preferably overnight.
Prepare the Chimichurri
  1. In a bowl, combine chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and black pepper. Mix well and set aside.
Grill the Steak
  1. Preheat the grill to high heat. Remove the steak from the marinade and discard the marinade.
  2. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.
  3. Let the steak rest for 5 minutes before slicing against the grain.
Serve
  1. Slice the skirt steak and serve with chimichurri sauce drizzled on top.

Notes

For best flavor, marinate the steak overnight. Adjust the spice level of the chimichurri by adding more or less red pepper flakes.
