Method
Prepare the Pasta
- Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
- In a large pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden.
- Gradually whisk in the milk, stirring constantly until the mixture thickens.
- Remove from heat and stir in the cheddar and gouda cheeses until melted and smooth.
- Add the mustard powder, garlic powder, onion powder, salt, and pepper. Mix well.
Combine and Smoke
- Preheat the smoker to 225°F (107°C).
- In a large bowl, combine the cooked macaroni and cheese sauce. Mix until well coated.
- Transfer the mixture to a baking dish.
- In a small bowl, mix the panko breadcrumbs, melted butter, and parmesan cheese. Sprinkle over the macaroni.
- Place the baking dish in the smoker and smoke for 30-40 minutes until bubbly and golden.
Serve
- Remove from the smoker and let cool for a few minutes before serving.
