Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes peeled and diced
Olive Oil
  • 2 tablespoons olive oil for roasting
Spices
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1 cup Greek yogurt or dairy-free alternative
  • 1/2 cup granola optional
  • 1/4 cup honey for drizzling
  • 1 banana sliced for topping
  • 1/4 cup chopped nuts such as walnuts or almonds

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the diced sweet potatoes with olive oil, cinnamon, salt, and black pepper.
  3. Spread the sweet potatoes evenly on a baking sheet.
Roast Sweet Potatoes
  1. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
Assemble the Bowl
  1. Once the sweet potatoes are done, remove them from the oven and let cool slightly.
  2. In bowls, layer the roasted sweet potatoes, Greek yogurt, and your choice of toppings such as granola, honey, banana, and nuts.
